Fresh, colorful, and endlessly customizable — everything you love about spring rolls, deconstructed into a bowl (no rolling required). The easy peanut sauce comes together in seconds with Umami Mami.
"This has been a go-to for my family's meal rotations lately. Lenny and Sonny (my 3 and 1 yr old) even get excited about it because it's colorful. My husband Mikey and I cannot get enough of the easy peanut sauce."
Ingredients
For the bowl
- 8 oz rice noodles or vermicelli, cooked
- 2 carrots, julienned
- 1 cucumber, sliced thin
- 2 green onions, sliced
- 1 red or yellow bell pepper, thinly sliced
- Handful of cilantro, mint, or basil
- 1 avocado, sliced
For the easy peanut sauce
- 1 After Noon Foods Umami Mami Dressing Starter
- 1/4 cup peanut butter
- Rice vinegar, to taste
- Squeeze of lime
- Sriracha, to taste
Optional
- Protein: marinated chicken thighs, tofu, or shrimp
- Brighten it with mango
- Spice it up with jalapeño

Directions
1. Cook the rice noodles according to package directions, then rinse under cool water and drain.
2. Prep the veggies: julienne the carrots and thinly slice the cucumber, bell pepper, and green onions. Slice the avocado.
3. In The Shaker, shake together the Umami Mami stick pack, peanut butter, rice vinegar, a squeeze of lime, and sriracha until smooth and creamy. Add a splash of water to thin, if needed.
4. Divide the noodles between two bowls and arrange the veggies, herbs, and avocado on top. Add your protein, if using.
5. Drizzle generously with the easy peanut sauce and finish with mango or jalapeño, if desired.
⚡ Tip: Make a double batch of the peanut sauce — it keeps in the fridge and tastes great on everything all week.
